Ingredients : Serves 4
4 small whiting
15 ml/1 tbsp plain (all-purpose) flour
50 g/2 oz/0.25 cup butter or margarine
2 spring onions (scallions), chopped
15 ml/1 tbsp chopped parsley
150 ml/0.25 pt milk

Method :
Dust the fish with flour. Melt the butter or margarine and fry (sauté) the fish for 10 minutes, turning once. Mix together the onions, parsley, milk and cream and season to taste. Pour over the fish, bring to the boil and cook for 5 minutes, stirring gently to avoid breaking up the fish. Transfer the fish to a warmed serving dish and pour the sauce over.
Serve garnished with the lemon wedges.
